Heat the pan on medium heat and add the coconut oil. Once the coconut oil is melted add all of the vegetables except for the spinach and cook for 3 minutes. Finally, add the eggs and spinach. Once the omelet is complete add the sliced avocado on top. Season with salt and pepper to your desire.
